Calendula is a Latin diminutive of ‘calendar’, meaning
“little calendar”, referring to the fact that it flowers for many months
‘Officinale’ means medicinal, and calendula has
been used traditionally as culinary and medicinal herbs; petals were used fresh
in salads or dried and used to color cheese or as a replacement for saffron
