Hypochaeris radicata

Hypochaeris radicata
Cat's ear, False dandelion
Poroelle enracinée

All parts are edible, but leaves and roots are most commonly eaten. Roots can be roasted and ground to form a coffee substitute.
Dandelion leaves are more jagged, cat’s ear leaves are ciliate, marginally fringed with hairs. Cat’s ears flowering stalk is usually branched, dandelions are not.

Bloom 4.08.13
Leaf 4.08.13

In Situ, 4.08.13, along an ancient road between Lacoste and Bonnieux
